EASY Tomato Basil Pasta

This is a SUPER simple recipe that I have loved having  hand this summer with our abundance of cherry tomatoes.  It's so simple but it's fresh and easy to serve on it's own or with grilled chicken or grilled Italian sausages.  



Here's What You'll Need...
- 8 oz pasta of your choice
- 1/4 cup olive oil
- minced garlic
- 3 cups cherry (or other small) tomatoes
- 1/2 cup chopped basil
- Kosher salt
- sugar
- cracked black pepper
- grated Parmesan 


Here's What You'll Do...

Step 1 - Cook your pasta to al dente, drain

Step 2 - Heat your 1/4 cup olive oil over medium heat.  Add in the garlic and let it cook for a minute or two.  Add in the chopped basil, tomatoes, 1 teaspoon (or so!) of garlic, a couple pinches of Kosher salt, a pinch of sugar and a few cracks of black pepper.  Let it simmer over medium for a few minutes while the tomatoes pop and the juice makes the sauce (mine usually take about 8 minutes).

Step 3 - Pour the sauce over the pasta, throw on some grated parmesan and stir to combine.  SO GOOD!







Again - so simple, SO DELICIOUS, works as a side dish or an entree and the perfect way to use up a bunch of tomatoes.  Dave and I both ate bowls of this for lunch  (Dave had a grilled sausage as well) and there was a generous portion left for lunch the next day but if I was making this as an entree for my entire family I would use double the recipe.
