Green Velvet Cupcakes

I was feeling festive this weekend and decided to try out  this recipe.  Luke LOVES red velvet and I thought this would be a fun twist and while they weren't super "red velvet-y" they were DELICIOUS!



Here's What You'll Need...

For the cupcakes
- 2 heaping cups of flour
- 4.5 tablespoons corn starch
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup butter, room temperature
- 1.5 cups sugar
- 3 eggs, room temperature
- 1.25 cups sour cream
- 1 teaspoon vanilla
- green food coloring

For the frosting
- 8 oz cream cheese 
- 4 tablespoons butter
- 3 cups powdered sugar
- 2 tablespoons heavy whipping cream
- 1/2 teaspoon vanilla



Here's What You'll Do...

Step 1 - Combine the flour, corn starch, cocoa powder, baking soda, baking powder and salt in a large bowl. 



Step 2 - Beat together the butter and sugar.  Add in the eggs one at a time.  Mix in the sour cream, vanilla and food coloring until just combined.  Mix in the flour mixture.  
NOTE: I only had light green food coloring - dark green would work WAY better!






Step 3 - Line a muffin tin with cupcake liners and fill the 24 cups with batter.  Bake at 350 degrees for about 16 minutes or until a toothpick comes out clean.

Step 4 - For the frosting you'll beat together the cream cheese and butter until whipped.  Add in the powdered sugar, vanilla and whipping cream and beat until fluffy.  If it's too runny... add more sugar.  Too thick... add more whipping cream. Easy!

  1. There is NO such thing as "Green, Blue, Purple Velvet cake.
    Red Velvet cake is a very unique recipe that has a chemical reaction added with beet juice.
    Otherwise, it's just a chocolate cake with a ton of artificial color.
    Please. Don't toss around "Velvet Cake " as just that.
