A few weeks ago I was flipping through a cookbook that I believe my mother-in-law gave me years and years ago. It's one of those old school books where everyone submits their recipe and then it's compiled and bound and there are always some absolute treasures in there.
Speaking of treasures let's talk about this GEM of a recipe that I assumed was named "rattlesnake chili" because it was extra spicy or something. Oh no, ladies. It involves ACTUAL RATTLESNAKE MEAT! And if you don't already know how to - there are directions on how to dress a rattle snake just in case. GOD BLESS TEXAS.
After getting over Rattlesnake Chili I continued perusing and stumbled upon this recipe for spicy Italian individual meatloaves which intrigued me because my kids LOVE meatloaf and imagine my surprise when I saw the authors name...
... Carol BASKIN!!! It was fate you cool cats and kittens! I had to try them.

Well... I didn't really try them but instead was inspired by the gist of her recipe to make my own. So here we go.
Here's What You'll need...
- 2 lbs ground beef
- Italian bread crumbs (about 1/2 cup)
- oats (about 1/2 cup)
- 2 eggs
- pizza sauce
- Italian cheese blend
Here's What You'll Do...
1) Mix together the ground beef, eggs, bread crumbs and oats
2) Divide the meat mixture into 8 sections and form them into mini loaves
3) Bake at 375 for about 35 minutes (make sure they're no longer pink on the inside)
4) Top with a spoonful of pizza sauce and cheese and bake for another 5-10 minutes
My kids DEVOURED these! I served with garlic bread and salad and they were a huge hit. I liked that they didn't take long to bake and the pizza sauce and cheese was a fun twist on "regular meatloaf.

ReplyDeleteLillian Hughes sounds like quite a woman! Rattlesnake chili and you know she made a snake skin hat band or two. These cookbooks are some of my favorites. Church ladies used to do them as fundraisers and they have some of the best recipes. I'll have to send you a picture of one of my favorite (and quite funny) recipes submitted by a man in the church. Your kids will love it!

ReplyDeleteI'm sure you've never had a recipe post be more hilarious...I'm camp "or chicken" on that chili recipe LOL! To add to the funny my favorite mini meatloaf recipe (Mini Cheddar Meatloaves) came from a cookbook just like this one that my co-worker was selling for her family reunion fundraiser. :)
