Lasagna Casserole

Last week I tried a new recipe and have already made it again because it was SO GOOD and SO EASY!  All three kids loved it and it made plenty for a meal and leftovers. 



Here's what you'll need...
- 1 lb sausage or ground beef
- 16 oz medium shell pasta
- chopped onion
- salt and pepper
- 4 cups shredded mozzarella
- 3 cups cottage cheese
- 2 large eggs, lightly beaten
- 1/3 cup graded Parmesan cheese
- 2 tablespoons parsley
- 24 oz jar of pasta sauce


Here's What You'll Do...
Step 1: Cook the sausage and onion until the meat is no longer pink.  Drain, add in the sauce, and set on low to simmer.




Step 2: While the sauce is simmering, combine the cooked pasta, 3 cups mozzarella cheese, cottage cheese, Parmesan cheese, eggs, parsley and a few dashes of pepper.  Transfer this to a 9x13 baking dish.  Top with the sauce/sausage mixture and bake, covered, at 350 degrees for 45 minutes.  Remove the lid, sprinkle the remaining 1 cup mozzarella on top and bake for an additional 15 minutes.







You GUYS!!! I know it's not pretty but it is TASTY!!!!


We all gobbled this up and filled thermoses with it the following couple of days.

  1. I make something very similar for my family and it is a favorite! In fact, I made it on Sunday evening, so we’ve been enjoying the leftovers for lunches. This is a great one to make ahead the night before and just pop it in the oven when you get home. I’m in education too (assistant principal) and this is great for busy afternoons.

  2. Substitute the cottage cheese for ricotta cheese instead! Heavenly, mmmm. I've also made this with ground turkey & it's delicious too.

  9. Just wanted to say thank you for your easy, delicious recipes! We are having this as a "freezer meal" tonight because I always make it in two 9x9's and freeze one for later...thankful to have it now. :)
