Sneaky Mashed Potatoes

I'm always looking for a way to sneak veggies into my kids meals and  when I came across  this recipe for mashed potatoes I decided it was worth a shot.  They turned out really fluffy and delicious and although I could taste the cauliflower in them (because I knew it was in there) none of the kids noticed.  SCORE!!!




What You'll Need:
- 4 red potatoes, washed
- 1 cup cauliflower (fresh) florets
- 1/4 cup sour cream
- 2/3 cups shredded cheddar cheese


What You'll Do...

Step 1- quarter your potatoes and put them into a pot of water.  Bring the water to a boil and let the potatoes cook for about 10 minutes.



Step 2 - Add the cauliflower to the potatoes and let them all cook together for another 10 minutes (or until the veggies are fork tender... I was skeptical but they were all cooked perfectly tender at the end of the second ten minutes.


Step 3 - Drain the water and add in the cheese and sour cream.  Mash them all together until they're your desired consistency.




These were SO DELICIOUS and a super simple side that I'll be adding to my repertoire for weeknight dinners.  I served them alongside  these pork chops and the entire bowl was gone.

  1. There's an entire cookbook out there called The Sneaky Chef. Sometimes I steam a bag of riced cauliflower and just mix it with rice or mashed potatoes

  3. When we were at my parents for dinner Sunday, they just used cauliflower. It was actually pretty tasty - even without the potatoes!

  4. I bought a bag of riced cauliflower & squash to add to mashed potatoes. Although it wasn't for a fussy child,(I just had some dental surgery and could only have liquids or mushy foods :( ) it added a nice flavor.
    Jessica Seinfeld published a cookbook on how to add veggies into recipes. It is called, "Deceptively Delicious".

  5. I put an entire bag of Trader's Joes riced cauliflower in my chili and usually in my spaghetti sauce. Smoothies with frozen sweet potato or butternut squash

  6. I've heard of people adding cauliflower to fruit smoothies and apparently you can't taste it at all. I still need to try that one.
