Hashbrown Casserole

I needed a quick side to serve with meatloaf the other night and had  this recipe bookmarked so I decided to give it a try and IT WAS SO GOOD!!! Healthy, no.  Delicious, yes.  If you need a simple, TASTY side dish this is the recipe for you!

Here's What You'll Need...

- a 30 oz bag frozen, shredded hash browns, thawed
- 1 cup sour cream
- 8 oz (or so) of sharp cheddar
- 1 stick of butter (or margarine)
- 1 can cream of chicken soup
- chopped onion
- salt/pepper to taste


Here's What You'll Do...

Step 1 - throw some chopped onion (I didn't measure... and I also used frozen... add as much or as little as you'd like!) in a bowl with the soup and all but about 1 cup of the cheese.  Mix it together well.


Step 2 - Mix in the sour cream (I used light) and then mix in the potatoes and stick of melted butter.  Mix it all until it's combined, then pop it into a greased 9x13 and top with the rest of the cheese.




Step 3 - Bake the casserole at 350 degrees for about 45 minutes (or until it's all bubbly and golden) and serve it warm.
This is the world's worst photo because it gets dark at what feel like 1 pm now :) and by the second day when I went to take a leftover pic I ate it before I remembered - but TRUST ME this is tasty!

  1. One of my favorites!! Once it's all prepared and ready for the oven-- I crush up corn flakes and put them on top of the cheese and bake. Just adds a little extra crunch! Thank you for sharing.

  2. Our neighbor made these for us ( with bacon wrapped meatloaf)when we had our 5th son.
    He also adds crushed cheezits on top before baking... super delicious!

  4. Great idea on the frozen onion. I often leave the onion out all together if I'm feeling too lazy to chop one! LOL! :)

  5. I have a similar recipe, and it is always a crowd fav. We love to put crushed potato chips on top (or ritz crackers) to give it a little crunch. We ALSO love to add some frozen broccoli florets for some added green, and have even thrown in chicken breast tenders and broccoli together to make a full meal casserole.

  8. This might sound insane, but a few years ago I heard about substituting sour cream for plain Greek yogurt when making things like this. It makes it slightly healthier lol, and honestly my whole family loves it!

  9. We always call these “funeral potatoes” (because they’re a standard potluck item in Oregon usually) and you are right, they’re so good!

    I usually half the butter and they’re still good!

  11. I make this for every family function. My nieces call it Aunt Pam's potatoes. Sorry you didn't make it until now but you'll be glad from now on. I double it for the family, saute the onions first and mix the cheese in. i couldn't live without this one!
