Linguine with peppers

Y'all. I whipped up this AMAZING linguine on a Friday night in probably under 15 minutes and when it was done I could not stop eating it.  SO GOOD.   And seriously so simple!!!




Here's what you'll need...
- 1 lb linguine noodles
- 1/2 stick butter
- peppers
- fresh parmesan
- olive oil
- sea salt
- garlic


Step 1 - Cook the pasta according to the directions. While that's cooking chop up 1.5 peppers (I used 1/2 of three different colors).




Step 2 - Melt 1/2 of a stick of butter and then cook the peppers and about 1 teaspoon of minced garlic until they're just starting to soften (about 4-5 mins). 



Step 3 - Drain the linguine and then toss it with a few splashes of olive oil.  Add in the pepper/butter/garlic mixture and toss again.




Step 4 - Grate about a cup of parmesan (like my makeshift setup???) ;), pour that on, sprinkle a little bit of sea salt and toss one last time.





Yes ma'am!!!  This would be great as a side, with grilled chicken mixed in, served warm or cold... you get the idea.  It's just delicious.


And keep in mind that a lot of the peppers had settled on the bottom of the dish.  I LOVE sweet peppers and this totally hit the spot.  Also... can we talk about how inexpensive this was to make???

  13. My Dad would make this meal often, but he also added onions and italian sausage. This was his favorite meal.
