Easy one pot dinner

This past weekend I was looking for a one pot meal and came across this recipe from Taste of Home. It looked simple and delicious and so I gave it a try.  Everyone in my house gobbled it up so I thought it was worth a share!



What You'll Need
- 1 lb ground beef
- chopped onion
- minced garlic (about one clove)
- 1 cup chopped carrots
- 1 cup peeled, cubed potatoes
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1/2 cup uncooked long grain rice
- salt and pepper to taste



Step 1 - Brown your meat with the onion and garlic.  This is one of my favorite smells EVER!!!



Step 2 - Pour in 1 cup chicken broth, 1 cup chopped potatoes, 1 cup chopped carrots (I used about 3/4 of a cup) and 1/2 cup of your uncooked rice.  

You could easily add in whatever veggies you like at this point... I think celery and peppers would be great!



Step 3 - Bring everything to a boil, cover and simmer for about 30 minutes or until the veggies and rice are tender.  


Step 4 - When everything was done cooking, I stirred in 2 tablespoons of soy sauce, sprinkled with salt and pepper to taste and served it straight from the stove.  EASY! Even with the rice a BIT on teh undercooked side we all gobbled it up.  I can only imagine what a hit it will be when the rice is done well :)

A couple of notes...

I used long grain brown rice and I ran into a little bit of trouble because my veggies were soft, the liquid was absorbed and my rice was still a little undercooked.  I checked and the cooking time for brown rice is a little longer than white, so next time I will probably start with just the rice and liquid for about 20 minutes and then add in the potatoes and carrots so that the veggies aren't overcooked and the rice isn't undercooked... or just use white rice :)

I think that this is one of those recipes that I'll be able to modify and change based on what I have on hand and who all is eating.  I could easily see doubling the amount of liquid and rice, adding in mushrooms, adding a packet of onion soup mix, etc. It was so simple and flavorful and I loved that it was one pot.

Speaking of one pot - several readers recommended this dutch oven before Christmas as an alternative to the Le Creuset and I ADORE it!!! I've used it a ton and have nothing but great things to say about it and it's $60 vs. the $350 Le Creuset.

  3. I've had that happen before with the rice too, it's undercooked but everything else is ready, good idea to start it early!

    1. From everything I've read it's super comparable to the pricier brand so I'll keep you updated if I stop loving it for some reason but I've used it multiple times a week since Christmas and still adore it!

    1. You're so welcome! I was hesitant to go with a less expensive option because of quality so when readers started commenting and saying how much they loved it and then I saw the amazing reviews on Amazon I figured it was a safe bet.
