Cranberry Brie Bites

Shay hosted her annual recipe exchange last night and this year we all brought appetizers . I wanted to mix it up and try something new and so I decided to make these cranberry Brie bites!




Here's what I used....

- Cranberry sauce (you'll need about a cup... I used the fresh sauce from Trader Joes. SO GOOD!)
- 2 sheets of puff pastry
- about 8 oz of Brie cheese
- sea salt
- 1 egg
- 1 tablespoon of water


 Step 1 - While the puff pastry was thawing I chopped up the Brie.  I bought a 9-oz piece and cut it into about 20 small chunks.



Step 2 - Line a baking sheet with parchment paper and preheat the oven to 400 degrees



Step 3 - I cut the first sheet of pastry into 16 pieces . I put a heaping teaspoon of cranberry sauce on each and then topped it with a piece of Brie.




Step 4 - Lightly beat an egg with 1 tablespoon of water and then brush it along the edges of the pastry squares. 


Step 5 - Cut the second sheet of pastry into 16 squares and place them on top of the brie/cranberry.  Use a little fork to press along the edges and seal the pastry. 


I was nervous because I made a HOT MESS!  Sauce was going everywhere, things were NOT looking pretty.  I was concerned :)


Step 6 - Brush the tops of everything with the egg mixture.  Shake on some sea salt.


Step 7 - I baked them at 400 for 15 minutes and they came out hot, melty and DELICIOUS!  They definitely didn't look perfect... but thankfully that didn't affect the taste :) 



Brie and cranberry together are one of my favorite combinations and these would be a great appetizer for Christmas.  I think you could probably prep them, cover them with saran wrap and refrigerate them until you were ready to bake.  I'm thinking they would be delicious after Christmas Eve church :)

  5. I have a friend who makes these for every appetizer get together we have but with guava. She just cuts the squares a bit larger and then folds the tops over to make a little basket-type thing. Might be easier and less messy. I'd eat them either way though! Savory goodies like this are my total weakness- I can pass up sweets all day long but these...I'd eat 10.

  11. I use the premade mini phyllo shells from the frozen aisle. Put a little Brie and a little cranberry in each then bake until melted. Yum!
