Salted Caramel Chocolate Chip Cookies

Yesterday was a rainy, yucky day.  No swimming.  No playing outside.  But still fun.  

While Griffin was napping I decided to try out a cookie recipe I screen shotted forever ago.  They would be perfect for Fall, but were great for this dreary evening as well.  They're also "special" enough that 3 or so in a cute cellophane bag would make a great little gift for a friend or teacher.



Here's what you'll need...
- 3 cups flour
- 1.5 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1 cup unsalted butter, room temperature
- 1 1/2 cups brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cup chopped pretzels
- 1 1/2 cups chocolate chips
- 18-20 caramels
- 36 extra pretzels
- more sea salt for sprinkling



Step 1 - Mix the flour, baking soda. baking powder and salt together in a bowl; set aside.





Step 2- Cream the butter, brown sugar and granulated sugar together (my butter was still a bit cold, so it took a while).



Step 3 - Add in the eggs and vanilla extract.  Mix together well.




Step 4 - Slowly mix in the dry ingredients from Step 1 and then add in the chopped pretzels and chocolate chips (I used about half semi-sweet and half dark chocolate morsels).





Step 5 - Cut 18 caramels in half.


Step 6 - Scoop dough using a 1/8 cup measuring cup (it's about 2 tablespoons).  Put half a caramel in the middle, roll the dough into a ball and place on a baking sheet.



Step 7 - Gently press a pretzel onto the dough and sprinkle with sea salt.



Step 8 - Bake at 350 degrees for 12 minutes.   Let them cool on the tray for 2 minutes and then transfer to a cooling rack.





Yes ma'am that's a melted caramel in the middle.  Amen.




 Step 9 - Enjoy the sweet and salty goodness!  Preferably with a glass of milk or scoop of vanilla bean ice cream :)
