Recipe Club: Pineapple Casserole Edition

Woo hoo for Recipe Club day!!!  



Today I'm sharing one of the strangest sounding and most delicious recipes ever!  The first time I had this casserole Sheaffer made it for Shay's recipe exchange and I believe she won with that recipe!   It's an odd combination of ingredients, but I PROMISE you won't be disappointed!  Trust me ;)




First, put one cup of sugar and 6 tablespoons of of flour in a large bowl and mix until combined.
  

Mix in two cups of shredded sharp cheddar.

 And then mix in two 20-oz cans of drained pineapple chunks.


Pour the pineapple mixture into a greased casserole dish (I used margarine).

Next, crush 1 cup of Ritz crackers (it's typically one sleeve)...

... and then pour in 6 tablespoons of the reserved pineapple juice...

... and one stick of melted margarine.

Mix that all together and put it on top of the pineapple mixture.  I actually used an extra half a sleeve of crackers and a little bit more juice - because who doesn't love Ritz ;)

 Pop it in the oven at 350 for about 20-25 minutes until the crackers are brown and perfection.



This is AMAZING served with ham and would be a great addition to your Easter table.

  4. Hi there! This sounds odd yet tasty haha! Just wondering while looking at your pictures - is it supposed to be one cup of sugar and 6 T of flour? I may try making this!! :)

  6. You mentioned "First, put one cup of flour and 6 tablespoons of of flour in a large bowl and mix until combined." Did you mean to say a different ingredient besides flour? Just wondering :)

  7. Yummy!!!! I think you can substitute the pineapple for apricots too. Marla makes it that way. This is so good!!

  10. I have a version that uses eggs and cinnamon but we like the recipe most similar to this. You can add a little flour or cornstarch to your pineapple juice (we like the tidbit sz fruit).

  13. This is seriously my favorite recipe EVER! My mom makes this every now and then. I had to go dairy free while nursing my daughter, and I couldn't eat it. This was one of my requests when I finally could eat dairy products again. I usually request that she set aside a small dish for me so that I will have some to take home. Love it!
