What's On... Your Menu

So, I completely forgot about my "What's On" post yesterday - but I'm on it today :)  During the school year I meal plan diligently.  Being out of the house every day from 7 a.m. - 4 p.m. leaves little to no room for last minute trips to the grocery store and/or figuring out what's for dinner.  Don't get me wrong - we have our fair share of frozen pizza nights - but for the most part I meal plan on Saturday mornings for the upcoming week, shop and prep on Saturday  afternoon and feel like I can tackle the world :) 

During the summer it's much more relaxed.  We eat out more often, eat dinner at the pool on the regular and are just all around more casual when it comes to meal planning.  I do all my Slightly Askew and blog work in our home office, but I keep my planner on this little area in our kitchen.  I feel like it's more central and easily accessible so this is kind of our family "headquarters".


I use The Simplified Planner by Emily Ley and it's perfect for me.  Every weeknight has a spot just for dinner...

Monday night we ate leftover lasagna, bread and cookies.




Tonight is Teriyaki Chicken skewers (I just marinate chicken breasts in teriyaki and then put it with pineapples and grill) with fried rice.   I haven't shared this recipe before - but tonight I'll take a few pics as I make it and share it soon!  It's easy and DELISH!!!

My kids have requested rocket dogs every day since we had our Patriotic Playdate so I'm obliging them Wednesday night.  I LOOOOOOVE broccoli cheese soup and have a really easy and yummy recipe for it.  July 4th is over - which pretty much means it's Fall in "Andrea Land" :) hahaha

Thursday night is our "clean the fridge" night...

... and Friday night we'll be heading to the mall for tacos :)  I have Math Department meetings ALL DAY Thursday and Friday so I'm taking it easy on myself in the cooking department.

Saturday I have something special planned for my kids and we're having "camp night" and will be eating sloppy joes and s'mores :)  I'm not a fan of sloppy joes - but I'm taking one for the team.  Sunday night will be pulled pork sandwiches and corn salad - I love doing crock pot meals on Sundays since after a busy morning at church it's nice to not have to "cook", but still have a nice meal.

Breakfasts and lunches I don't meal plan for. I know some people like to outline that as well - but at my house we're often doing "box lunches" on the go.... at the pool, in the car in between appointments or at the park.  Lunches for my kids are usually whatever is around.... sandwiches, a fruit, yogurt, etc.  If we're at home we'll do chicken nuggets, macaroni and cheese, etc.  I'm a "snacker" and so often lunch for me is usually something like hummus and carrots while I'm getting the kids lunch ready and then guacamole and chips during nap time.  :)  Breakfasts are typically oatmeal, cereal, toast, eggs, etc.

I can't wait to see what everyone else is eating this week!  I'm always on the lookout for easy, family friendly meals!  Sorry again for the mix-up yesterday!!!  I'll be better next month, promise! :)

  1. Oh my goodness! I could just sit and flip through your calendar all day :). For some reason, reading your calendar seems relaxing to me!

  3. I get "fall fever" after July 4th also. My daughter had a dreamy look on her face yesterday and she said it was from thinking about fall days and drinking pumpkin spice lattes:)

  5. I love that planner you have! It's so cute and looks like it really would help with keeping everything organized. I'm with you on keeping it more casual during the summer. Who wants to be in the kitchen all evening when it's summer? Not ME! :-)

  10. I am totally jealous of your super organized planner!! You inspire me with the way you so perfectly use it! And now I want to meal on Saturdays instead of Sundays-- it just seems easier! ;)
